A big white beet, slightly green at the top of the root. Tender and very sweet, not much beet flavor. Wonerful for people who don't like the flavor of beets, very nice chopped with red beets for people who do. Greens are large and tender. For a fun experiment, allow one plant of this variety to go to seed between two plants of your favorite red variety (or use 2 red varieties to increase chances that one will go to seed at the same time as the white beet). If you happen to notice when they reach the pollen stage, you can put a big bag over all the plants and shake to increase the rate of pollination. After seeds mature on the white beet plant, gather seed and keep in a paper bag. Plant the seed the next year for tender, sweet pink beets with flavor intermediate between the white and red ones. Many people like these pink ones better than either the red or white ones.
