This is the traditional Appalachian dry / shelly bean. Related to Vermont Cranberry and Borlotti, in my experience it's smaller and has more variety in the dry-bean color. But those little shrunken dry beans really plump up in soup. Tasty. (Oh, easy to grow, too.) |
