In two years of successive plantings, I've consistenly gotten woody stems. When I have waited for 8" stems with 2-3 open flowers, only the 2-3 inches at the tip are edible. The attractive, 3/4"-thick stem has well-developed fibers just outside the pith, so they can't be removed by peeling. Picking earlier works OK, but there are better greens for that purpose. Side shoots are abundant, and suggested in the decsription, but the became woody even smaller. I may try one more time on a compost pile, or some similarly super-fertile substrate.
