Root parsley is a very under utilized garden and kitchen friend. My German grandmother always had some on hand for making her soups, and root parsley adds a sort of sweet earthy richness no other ingredient can. (Just add in a well washed root chopped into large hunks when you make your stock.) It is really one of those practical German-grandmother type plants anyway since you can harvest from the tops to use as leaf parsley while letting the root grow to maturity. I have grown Hamburg root parsley in Zone 7a and in 5B. In 7a it wanted a little shade to be cooler in the heat of summer. It performed well, no muss, no fuss, just a happy plant.
