Description: Hybrid. Large green 5 by 6 inch smooth leaves. Not recommended for spring planting. Excellent for over-wintering. Slow to bolt. Tolerant of downy mildew 1 to 3. Almost entirely lacking in oxalic acid.

Most spinach varieties are high in oxalic acid, which can interfere with mineral absorption and contribute to kidney and gallbladder stones. Olympia has a low oxalic acid but is not as tasty as Monnopa, a round-leaved variety which also contains very little oxalic acid in the leaves and hence is the sweetest spinach. Unfortunately, seeds are only available from Bountiful Gardens.

It was very easy to grow, the seeds germinated quickly. It wasn't very productive for me, only because I harvested it before it had reached full growth, but it was good.
