This is a medium yielding, oblong-shaped, light red-skinned tuber with late maturity. It is an heirloom tablestock variety of great importance historically. We have never grown, eaten, nor ever even seen the Garnet Chili. However, it should be known that this is perhaps the most important variety in the North American potato industry. It is an 1853 seedling of the Rough Purple Chili procured by The Rev. Chauncey E. Goodrich of Utica, NY, from South America in 1851 in a attempt to stave off the then on-going problem of potato degeneration (as well as the on-going problem of potato rot). Off-spring of Garnet Chili have subsequently produced a huge percentage of the most successful potato varieties of the late nineteenth and twentieth centuries. For this, The Rev. Goodrich must be given his just due. As others have suggested, due to its historical importance, if you can find it, Garnet Chili potatoes ought to be served with a sense of history and a light dressing of mayonnaise such as found in lobster potato salad. The Rev. Goodrich had one thing right: \\\"Garnet Chili is of excellent quality\\\"
