My family has been growing this bean and it's predecessor (Oregon Giant) for over 100 years. The beans have a wonderful hearty flavor. We cook them for an hour or so (with ham hock is nice) and serve sprinkled with chopped Walla Walla sweet onions and chopped beefsteak or garden fresh tomatoes. That combination is a killer flavor loved by all! Cascade Giant is a hybridization of the Oregon Giant that produces a less stringy bean and a bit better flavor. It's not always easy to find these seeds, so we save them year after year. I am getting ready to plant this season's crop right now!
