Holstein is a beautiful cowpea that is easy to grow, yields well and tastes really good. It is compact in growth habit and doesn't sprawl like some other cowpeas. I like the thick dark soup and flavor when boiled.

This cultivar in growth and yield is similar to the California # 5 Blackeye. The black splotches cover a much larger area of the pea and do resemble the markings on a Holstein. The taste and texture are intermediate between th Blackeye and Black Crowder. Even as a green shell, it creates a moderately thick black soup when cooked.
