We sowed seeds in March and harvested in summer. We were away on vacation when they were ready to harvest, so they were the size of flattened softballs when we finally did pull them. We expected they would be woody and inedible, but instead they were excellent, smooth and tasty. We shared them with others in our community farm and they were similarly impressed. We baked them in a pan with a little water in it for an hour or so, then ate some warm and chilled others for a delicious beet salad. |
