Description: Improved Chioggia-type. Plants produce 3- to 3 1/2-inch diameter, globe-shaped roots with magenta and white bullseye-pattern in cross section. Roots are larger and higher-yielding than Chioggia. Harvest for greens, too.

We are not very good at thinning our beets; we just pull out the most crowded as we harvest. These did very well in spite of our neglect. Beets got absolutely enormous! Beautiful light red skin left some people wondering if they were giant radishes. Stayed tender even when very large. Milder than dark red beets. Serve them raw - yes, raw - in slices to preserve the beautiful red and white bulls-eye pattern.
