Description: Root crop similar to parsnips, but roots are thinner (up to about 3/4 inch). Plants produce bundle of swollen greyish-white roots from the crown that can be harvested in fall but usually overwintered to increase sweetness. Start indoors 8 to 10 weeks before transplanting or direct seed in spring. Thin to 1 foot. Grows 3 to 6 feet tall. Thrives in boggy ground.
